Power Laddu/ Dry Fruit Laddu is a very popular healthy snack in India. Its healthy, delicious and really quick to prepare and definitely acts like a energy bar. The best part of this recipe is that no added sugar is used. The sweetness on this recipe comes from dates, figs.
Serves: 5 people; Prep Time: 15 minutes; Cook Time: 10 – 15 minutes
| Ingredients for Power Laddu 2 tbsp. ghee / clarified butter ¼ cup unsalted pistachios ¼ cup unsalted cashews ½ tsp cardamom powder ¼ cup unsalted almonds 1 cup seedless dates ¼ cup semi-dried/ dried fig Step 1: Prep and Roast the nuts Directions: Finely chop/ grate the pistachios, cashews, almonds. The consistency of the chop or grate should not be powder level. Once they are ready, roast them on a pan in medium heat for about 3-4 minutes. Keep stirring the nuts continuously to prevent it from overcooking/ burning. Step 2: Prep dates and fig Directions: Add seedless dates and figs to the blender and coarse blend them. Please dont add any water. They should have a paste consistency. |
| Step 3: Finish the Laddu Directions: Add the clarified butter/ ghee to the pan along with the dates and fig paste and the cardamom powder. Keep mixing them together for about 5 minutes. The dates should start releasing the old and everything should be nicely mixed with a paste consistency. Let is rest for about 3-4 minutes and start making the laddus with your hard. If you make them medium size, you will end of making 5-10 laddus and if you make them small size you should get around 15-20 laddus. Let them cool off and then enjoy them fresh. You can also store them in an air tight container for about 2 weeks for best taste. You can microwave them for about 10 seconds or so if you are not eating it fresh and prefer to have it warm. You can add any other nuts/ raisins of your choice to the mix or take out anything that you dont like from here. The concept of preparing still remains the same. |
